Working for Company A on H1B, Company B filed for my GC and I never worked for them. I got my EAD/AP.
Can I go and take perm offer with a client using EAD as my H1B expiring soon with out using AC21? or Do I have to go and work with my sponsor company B on EAD? They still sponsor my GC irrespective.

You can do either. First discuss the whole situation with an Immigration Lawyer.
